I think Fisherman Job could be great, a lot of newbies that dont even known DMing and i see a lot of them everyday doing taxi/truck/prostitute ecc, maybe with new features as i explained in the post maybe It could be good, a lot of people like fish.
For criminal career, Just Do It like Cop job with 10 Levels and some bonuses for extra Money from robberies It could help people to earn more money than actually they do and sprone cops to be criminals.

Maybe something  like robber rank murderrer rank rapist rank etc. And the higher crimnal xp you have more money you get from each kill i.e.

the business idea is really good.. trying to figure out the numbers i think will be hard for mike to organise but it will be a very good implementation.
criminal lvls will make me actually grind for something so again i really like it
