1:00 - I basically became a Disney's princess when I tried to become steal that man's bike. I know that this bug is mostly on the behalf of SAMP since I've seen it on other servers too, but is there really no way to overcome it?

The animation restriction which is supposed to fix players abusing them is what screws you over. You can't get out of it without doing so..maybe a g-abuse into passenger seat if there's a vehicle nearby might help you unfreeze, although i recall i once couldn't do it.
Also, once frozen you usually become immune to damage as well which is another problem.
This is nothing to do with the script. It's a known SAMP/GTA bug. It's almost impossible to detect and the conventional methods to unfreeze the player don't work, only putting them in a vehicle then ejecting them do. But as I said, it's almost impossible to detect this.
Adding an /unfreezeme or similar command would be a good idea tho, of course taking into account that you may have been frozen by an admin and that it could be abused if not well-designed (i.e. to cancel animations or to avoid dying from a fall).
