Being a mechanic these days basically equals being jobless. I think you can add levels to the job like the medic & cops. So the higher the mechanic goes, the more he can do. like armouring the vehicle, changing the color, fixing the bodywork and etcetera. To avoid possible misusing of these abilities, the prices can be higher and there can be a cooldown for armouring the car or whatever. OR you can make it an obligation that the high-level mechanic needs to bring his specified mechanic vehicle close to the car he wants to add armour to or paint and fix the bodywork. Or to be in his job vehicle. It can be less too cool.
